Don't be fooled by the veg sneaking into this desert, this cake is just as (if not more) delicious as any other indulgent cake. The courgette means less flour is needed, whilst also injecting some moisture into the cake resulting in a juicy yet light texture.

2 eggs
125ml sunflower oil
150g caster sugar
225g self-raising flour
½ tsp baking powder
¼ tsp salt
1 lime for lime zest
