Bish Bosh Banana Bread

Treat yourself with this tasty yet super simple banana bread. It's a great way to turn those bananas which are past their best into something you'll be enjoying for the next few days.

It's super easy to make and don’t be fooled by the name – it’s a CAKE, you will need.

Chapter 1

The ingredients

A big bowl for mixing

8inch long loaf tin

An oven (cleanish if possible)

4 very ripe bananas – skin more black than yellow really

100g butter (salted or unsalted, no biggie)

200g light brown sugar

2 large eggs

1 tsp vanilla extract/essence

½ tsp cinnamon powder (optional)

1tsp bicarbonate of soda

200g plain flour

100g chopped walnuts (optional)

100g dark chocolate chips (optional)

Chapter 1

The method

  1. Put the oven on to warm at 180 C
  2. Mash up the bananas in the big mixing bowl and then combine each of the ingredients in the order they’re listed above. No gadgets required, no particular consistency to aim for – just get it all in and mixed up with the same fork you mashed the ‘nanas with.
  3. Pour the lot into a greased 8-inch loaf tin. Bung it in the over for an hour.
  4. After this test the banana bread with a knife. You should be able to stick a knife in it and pull it out without any gooey stuff sticking to it – if not then leave it in a few mins longer.
  5. When your testing knife comes out clean pull your tin out of the oven and turn it out onto a cooling rack, or your grill tray (once you’ve cleaned the bacon fat off it – or not. Entirely your choice)
