Coffee marinated steak

You've probably tried ham cooked in cola, but have you tried steak marinated in coffee? I thought not. Coffee is the perfect marinade for beef and pork, its natural acidity helps to tenderise the meat, whilst the coffee taste gives it a deeply savoury and earthy flavour!

This recipe goes amazingly with thick-cut chips and you can even heat up the marinade after to use as a sauce.

Chapter 1

The ingredients

2 rib-eye or sirloin steaks (2cm thick)
1⁄2 tbsp olive oil

For the coffee marinade:
1 tbsp soy sauce
100ml espresso (left to cool)
1 tbsp red wine vinegar or balsamic
1 garlic clove, crushed
1 tbsp dijon mustard
2 tbsp light brown sugar

The method

  1. Mix the marinade ingredients well in a bowl.
  2. Place the steaks in a large resealable freezer bag. Add the marinade and leave to marinate in the fridge for at least 1 hour, but ideally 2-3 hours.
  3. Once the marinating time is over, take your meat of the fridge and leave it to warm up to room temperature. This usually takes 20-30 mins. Never start cooking steak straight from the fridge, as it will cook unevenly.
  4. Put a large frying pan over a medium-high heat. Remove the steaks from the marinade and pat dry well on kitchen paper.
  5. Brush lightly with oil, season well and fry for 2-3 minutes on each side for medium-rare (or until cooked to your liking).
  6. Rest for 5 minutes under a loose sheet of foil, before slicing to serve.
