Chapter 1

The ingredients

200g  mushrooms
4 garlic cloves, finely chopped
1 small chunk fresh root ginger, finely chopped
3 spring onions, shredded
1 tbsp soy sauce150ml vegetable stock
1 tbsp cornflour + 2 tbsp water
1 tsp white wine vinegar

Chapter 1

The method

  1. Fry garlic and ginger with fry light for 1 minute.
  2. Add chopped spring onions and fry for a further 1 minute.
  3. Add mushrooms and fry until well cooked.
  4. Add soy sauce, vegetable stock, corn flour.
  5. Stir well and simmer if needed.
  6. Serve hot!
